This is Emeril’s deviled egg recipe. I use Champagne vinegar instead of white wine vinegar. If you don’t have Chapagne vinegar, white wine will be fine.
Ingredients:
6 eggs, hard boiled, cooled, and peeled
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Champagne vinegar
1 teaspoon finely chopped chives
Hot pepper sauce
Paprika
Salt and pepper

Cover eggs with water.
Put lid on top of pot.
Turn heat on high.
When the water reaches a rolling boil, turn the heat off.

Rosemary oven fries a-la Big Ed. They’re easy, delicious and fairly healthy.
Preheat oven to 400 degrees.
